Preheat your grill to medium high heat.
In a small bowl, combine the chia seeds with the water. Let the mixture sit 5-10 minutes or until it has thickened and is goopy.
To a large mixing bowl, combine the oats, almond meal, maple syrup, baking soda, salt, coconut oil and vanilla. Add the chia seed mixture and then mix well making sure the oats are well moistened. Stir in the chocolate chips.
Slice the peel of the banana from stem to bottom, while also slicing the banana inside lengthwise. Basically, cut the banana in half except for the tip.
Carefully open the banana just wide enough to place the oatmeal mix inside the peel with the banana. Stuff the cookie dough inside the banana allowing some of the dough to pop out of the peel.
Wrap the bananas with aluminum foil and place on the grill or directly in the coals of a fire. Leave in long enough to melt the chocolate and cook the cookie, about 8-10 minutes. During the last few minutes of cooking, I like to unwrap the foil a bit and continue cooking the bananas until the top of the oatmeal gets crisp.
Unwrap the bananas, open the peels wide, add a scoop of ice cream and eat with a spoon.

Notes

*These bananas can also be baked in a 375 degree oven for 10-15 minutes.
**The bananas can be prepped a few hours in advance and then baked as directed.
